Vanilla from Madagascar is classified as bourbon vanilla.
Bourbon vanilla does not mean the quality but the origin of the vanilla. If it comes from Madagascar, Reunion or the Comoros , vanilla then benefits form the Bourbon appellation. However these countries are all known to produce good vanilla. Bourbon is often confused as a sign of good quality.
In order to properly choose the type of vanilla that will suit your use, it is important to know it’s different technical classification, in order of quality.
1. Black Vanilla Bean
This is the top of the range with the highest maximum moisture content 38%. Rare very oily and supple, black in color slightly tilted towards towards brown, it has a very chocolate fragrance and is easy to split. A pod weighs 3 to 5 grams and measures between 14 and 18 cm. Ideal for a gourmet cuisine and discerning gourmets.
2. Brown Vanilla Bean
It is a high quality vanilla. It differs from black vanilla in its lower moisture content up to 30%and its color is more brownish, reddish in some places. A pod weighs 2 to 4 grams and measures between 14 and 18cm. Warning some unscrupulous sellers sometimes pass this vanilla for black vanilla given its strong physical appearance.

3. Red Vanilla Bean
It is a medium quality vanilla. It differs from brown vanilla by its moisture content less than 25% and its reddish color. A pod weighs 2 to 3 grams and measures between 14 and 18 cm. Used in the United States, this vanilla enjoys an excellent value for money.
4. Sliced Vanilla Bean
It is vanilla naturally split on the vine at the moment the pod reaches full maturity. Not split, these pods would have been classified black or brown. They lost some of the seeds during ripening but, apart from the lesser decorative interest, their intrinsic qualities are preserved.
5. Short Vanilla Bean
They are vanilla of mixed qualities and sizes less than 14 cm. Cracking becomes a tedious job because of its size. Thinner, it also has proportionally fewer seeds but it’s intrinsic qualities conserved.
